— Neapolitan pizza

Neapolitan pizza, made up north

Neapolitan pizza comes from Naples and follows a short set of rules: a soft, slow-proved dough, simple toppings and a very hot oven. You get a light base with a puffy, charred crust and a soft middle. It isn’t meant to be crispy.

We started out with a pizza van on the streets of South Tyneside in 2020. Now we make it at South Shields’ first Neapolitan inspired pizzeria, in Westoe Crown Village.

— How we make it

What makes it Neapolitan.

Neapolitan pizza at Up North

The dough

Neapolitan dough is flour, water, salt and yeast. Ours is made fresh in house every day and left to ferment for at least 24 hours, which is what makes it light and easy to digest.

The toppings

Crushed Italian tomatoes and fior di latte, with a few good toppings on top. Neapolitan pizza keeps it simple and lets the dough do the work.

The oven

Our Italian Sud Forni Opale oven is AVPN approved and runs at over 470°C. A pizza takes about 60 seconds, which gives the crust its puffy edge and charred spots.

The panuozzo

The same dough, baked and filled as a sandwich. The panuozzo comes from Gragnano, just outside Naples, and we serve it at lunch.

Neapolitan vs takeaway pizza

Cook time 60 seconds

Most takeaway pizza spends several minutes in a much cooler oven.

Crust

Soft and airy with charred spots from the heat, rather than even and crunchy.

Middle

Soft by design. Slice it into quarters and fold at the crust.

Toppings

A few quality ingredients rather than a heavy load.
